Perhaps you could change out the greens and use arugula uncooked so you wouldn't have sad wilty wet greens.

I think sauteed vegetables in one big container, ultimately used for the whole salad, greens in another and bacon, in yet another small container in a cooler would make for a great picnic salad that you could combine all right as you serve. This turned out great! Was super easy and quick - perfect for a lazy and affordable!

I don't see why not. Maybe reserve the crispy bacon to be put on at the time of serving I have made this twice, the second time without the chard or kale. While I love leafy greens, the texture didn't work for me in this dish. With that change, this recipe is delicious! Per some other comments, I plan to try it with a can of white beans next time.

Delicious, easy, and perfect for using up swiss chard and kale from the garden. The writer is rightthis recipe is versatile--you can substitute many other vegetables I used zucchini and carrots , and vary the amounts as well. The bacon makes it wonderful, but I suppose it would be fine without it for vegetarians.

used 6 ears of corn and they yielded 4 cups. used a carrot AND the red pepper. used double the scallions. cooked the greens separately with minced garlic and a bit of the leftover bacon fat.

I substituted white beans for the corn ßß worked great and made a delicious protein rich one pot meal. We just ate this for dinner and everyone liked it, which is kind of a miracle. I added garlic because I read one of the comments above recommending it, and I used carrots because I didn't have a red pepper.

This recipe is perfect as written. However, I had some leftover grilled shrimp which I added at the end and WOW! Delicious, healthy, and easy! I actually like this better without the greens - they change the texture of the dish. I add bell pepper and carrot, and follow the rest of the recipe pretty closely.

I made this with the leftover veggies in my crisper- kale, onion, sweet potato, carrot, and sweet baby peppers. Onion, carrot and sweet potato in first , then the kale, and then the peppers. Finished off with the bacon and it was wonderful. My 18 month old would still not eat it.

This was a super satisfying and tasty side dish. Loaded with an assortment of colorful veggies that add contrast to any plate. I enjoyed the simplicity of the ingredients and how quickly everything came together. Such a great recipe, very easy to modify. Any leafy greens would work. I actually threw in some zuchini and kalamata olives for variety. And I definitely agree about massaging the kale too! It makes all the difference! This salad was AMAZING!

I cooked the corn in the morning, let it strain for a long time, and then put it in the fridge til dinner time and that helped the corn be not super soft. Overall, however, the recipe was GREAT and I would be proud to serve this to others!
